UCC culinary arts prepare buffet for the public, Monday

Winchester — A fine buffet luncheon will be laid before the public on Monday, November 17, in the Umpqua Community College Campus Center dining room.

From 11 am to 1 pm, the students of the College’s “garde manger” class (literally the keeper of the food or pantry supervisor and the task of preparing and presenting cold foods) will serve hot and cold hors d’oeuvres to the public, as well as the students, faculty and staff of the College. The cost is $6.50.

Last year, UCC’s culinary arts program established its reputation with the public by a series of popular and well-received weekly luncheon buffets, each themed from a different country or culture. Toward the end of the year, as a final project, students planned the menu for, prepared and served gourmet “prix fixe” evening dinners to the public at which the diners’ comments and feedback comprised one-half of the students’ grades.

Under the supervision of their class instructor, Chef Luke Schrock, 20 UCC culinary arts students will each choose and prepare two hot and cold dishes for Monday’s buffet.

“There will be plenty of good food,” said UCC culinary arts director Chris VanDyke. “Though a hors d’oeuvres banquet, it will definitely make a meal!”
